Vegetarian recipes mushroom stuffing
Add mushrooms taste so many vegetarian dishes, and they are the perfect ingredient in your filling to put vegetarian! This vegetarian mushroom stuffing recipe calls for cashews and pepper, as well as traditional filling ingredients such as celery and thyme. Thank recipe Wheat Foods Council
Ingredients:
- 3/4 pound bread, cubed
- 1/4 cup butter
- 1 large red onion, chopped
- 1 large red bell pepper, chopped
- 1/2 pound mushrooms, sliced
- 3 stalks celery, chopped
- 1 1/2 cups roasted cashew pieces
- 2 tbsp fresh thyme or 1 tsp dried
- 2 tbsp fresh rosemary, or 1 tsp dried
- 1/4 tsp ground nutmeg
- 3/4 cup vegetable broth
- 2 eggs, beaten
Preheat oven to 400 degrees..
Place bread cubes in a shallow oven and bake until golden brown, stirring occasionally, about 20 minutes. Transfer to large bowl. Set the oven to 350 degrees down.
Butter in heavy large skillet. Onion and cook until clear, stirring occasionally (about 10 minutes). Add red peppers, mushrooms and celery, cook until soft - about 5-7 minutes.
Combine the bread in a bowl, nuts, spices, vegetables, soup and egg. And mix well Pour into greased 8-inch or similar size. (Can be prepared the night before and refrigerated). Cover and about 1 hour.
